Chocolate Sparkle Cookies

Here is the recipe for the cookies I've been promising Liz and Michelle. The recipe comes from this bakery in Vancouver, Canada. I've never been there personally, but I've made the cookies enough to know that it would be worth the trip. They are lovely and chocolatey and rich and you don't even miss the flour. I usually buy the almond meal at Trader Joe's, but you can easily do it yourself with some almonds and sugar and a food processor(just subtract the amount of sugar added to the almonds from the recipe). Make sure the almonds are really cold when you process them or you will get almond butter, which isn't such a bad thing really.

Jenni, the Chalupa was fabulous! I got the pork loin roast, which I have never purchased before, and I figured that I should cut it out of the string. When I did, it was already divided into halves which was great because I put one in the freezer to make for another time and then was easily able to cut the recipe in half like you suggested. I still have tons left over. What a great meal to make for a sick wardie, I thought. Do the roasts always come like that, or was I just lucky that time? What a great salad that would make too? Don't you think? Just like the ones that we get at some of the mex places around here. I was pretty excited about all the possibilities.

Tiff, the pork loin roast, I am not sure if that is how they usually come. I know pork tenderloin usually come two to a package. I've only had one roast when I have bought them before. Lucky for you. Glad it turned out. I always hesitate a little to share recipes for fear that people will invest all that time and declare it disgusting!
