Pumpkin Muffins

I think these are the best pumpkin muffins that I have tasted. A friend of mine in Kansas shared this recipe with me. I love that the recipe calls for buttermilk and molasses. I made them mini size and they were perfect. I used all whole wheat flour too and they are great. Chocolate chips wouldn't be a bad addition either. Here is the recipe from Elie Kreiger at Food Network.

My kids love pumpkin muffins and I've been using the recipe at www.verybestbaking.com called kid's favorite pumpkin muffins. I make a few alterations though: I use 2 cups ww flour and 1 cup white. I use half the oil called for and substitute applesauce, and I only use half the sugar and put in honey instead. My kids can't tell the difference and they gobble them up. They even freeze well and have been a hit everywhere I've taken them. I will try your recipe here, though. And then compare notes.
