
I made
this chili the other day, but was not crazy about it. It has potential, but needed a lot of work. I added garlic and that helped tremendously, but it still needs a little something. I have tried many a chili recipe only to keep going back to my faithful
stand-by. It has a whopping 1/2 cup of chili powder, which is way too much for me, I use about 1-2 tablespoons. I also leave out the stout. Besides those 2 changes this chili is delicious, I love the smokiness of the chipotle peppers and the lime crema makes it extra deliciousness.

What is "lime crema?"
Amanda - in this case it is just sour cream mixed with lime zest and juice. I am sure you've had mexican crema and may not have realized it. It is a thick cream, not quite sour cream, not quite whipping cream.
